SUMMARY:

The oil spill on the beaches of the Brazilian northeastern coast in 2019 can be considered as one of the biggest environmental disasters in the history of Brazil. This event was unprecedented in the country, due to the great geographical extension and duration of time, with more than 4,000 kilometers of coast reached by oil. In the face of this accident, environmental, social and economic impacts were felt. Although the oil is no longer reaching the beaches, the reflections are inevitable. As far as the culinary area is concerned, the consumption of fish and seafood has fallen, resulting in a decrease in sales for both fishermen and establishments selling these products, such as restaurants. Therefore, this research aims to analyze the perception of consumers and entrepreneurs in the consumption of fish and seafood in the face of the oil spill on the Brazilian northeast coast. The research is of applied nature, since it contemplates real situations and local interest, it has a quali-quantitative approach, because it is based on the perception of clients and entrepreneurs, subjective, and quantitative, because there was measurement and treatment of data, and its technical procedure is of the Survey type. For data collection, two research instruments were developed. To interview customers, a questionnaire composed of 60 questions was prepared and obtained 488 respondents. An interview script was also created, which obtained data from 15 restaurants located in three Brazilian states. For the analysis of the questionnaire data, descriptive statistical analysis was used for parts I and II of the questionnaire. For the interview, the descriptive analysis for parts I and II of the interview script and the qualitative analysis for the open questions. Regarding the results of the research, we verified the existence of three groups, those that consume only fish, those that consume only seafood, and those that consume both simultaneously, with a convergence in the answers of the three groups for most of the variables. For the consumption of fish and seafood in restaurants, it was found that the respondents did not change their consumption habits in the face of oil spills. Regarding the interview, the perception is that there were falls in the sales of the dishes based on fish and seafood, and in some cases, leading to the closure of the establishment.
